Cod Au Gratin Recipe
(serves 4 )

 

Ingredients:

4 cups/ 1 L
2 lbs/ 900 g
1 1/2 cups/ 375 ml
1 cup/ 250 ml

 

celery stalk, diced
carrot, pared and diced
onion, sliced
bay leaves
water
fresh cod, cut in 4 pieces
white sauce, heated
grated Gruyere cheese
a few parsley sprigs
salt and pepper

Method:

  1. Place vegetables and seasonings in saute pan. Add water and bring to boil over medium heat.

  2. Add fish to pan. It should be covered completely by liquid. Cook 8 minutes over low heat.

  3. Use slotted spoon to remove fish from pan and drain well. Transfer fish to buttered ovenproof baking dish. Pour white sauce over fish and top with grated cheese.

  4. Place in oven and broil 5 minutes.
