Chilled Wine Punch Recipe
(makes: 8 glasses)

Ingredients:

white sugar
stick cinnamon
cloves
fresh pineapple, cubed or cut into wedges
brandy
rum
lime, thinly sliced
full-bodied red wine, such as a shiraz, chilled
ice cubes

Method:

  1. Wash the orange and lemons under warm running. Pare the rind of the orange and one of the lemon finely, then squeeze and strain their juice. Thinly slice the other lemon.

  2. Pour the water into a stainless steel or enamel pan. Add the orange and lemon rind, sugar, cinnamon and cloves and stir over a medium heat until the sugar has dissolved, then bring to boil for 2 minutes. Take the pan off the heat, cover and allow to cool. When cold, chill for 3 hours.

  3. Put the pineapple into a jug. Add the orange and lemon juice, brandy, rum and the lemon and lime slices, and stir well. Cover the jug with plastic wrap and chill.

  4. One hour before serving, strain the spiced sugar syrup through a nylon sieve into the jug. Pour in the wine, stir and chill. Just before you serve the punch, add the ice cubes.

Variations:

  • For an alcohol-free drinks, use the juice of two lemons instead of one, and 1 liter of grape juice instead of the wine and spirits.

  • For a hot punch, allow the sugar syrup to infuse at room temperature for an hour then strain it into a large pan. Add all the remaining ingredients, stir well and heat until the punch becomes very hot, but do not allow it to boil. Serve in punch cups or heatproof glasses.

PREPARATION TIME:   30 minutes, plus 3 hours chilling time                    COOKING TIME:    5 minutes
