Cherry Brandy Recipe
(makes: about 750 ml) |
Ingredients:
500 g
75 g/ 1/3 cup
600 ml |
fresh dark cherries, such as
morello
caster sugar
brandy |

Method:

Wash the cherries
and pat them dry with kitchen paper towels.
Remove the stalks, then prick each cherry all
over with a clean needle or skewer.

Put alternate
layers of cherries and sugar in a large clean
jar. Pour in the brandy to cover the cherries
completely.

Seal the jar
tightly and leave it in a cool, dark place for
three months, shaking the jar occasionally until
the brandy has taken on a deep rich color from
the cherries.

Strain the
flavored spirit through a funnel lined with a
double layer of clean muslin into a clean
bottle. Seal tightly with a cork or screw top.
Drink immediately, or store in a cool, dark
place.
