Apples with Sabayon Recipe
(serves 4)

Ingredients:

1/2 cup/ 125 ml
1 tbsp/ 15 ml
1/2 cup/ 125 ml
2 tbsp/ 30 ml
4 tbsp/ 60 ml

1/4 cup/ 50 ml
4 tbsp/ 60 ml
 

 

medium-size apples
granulated sugar
cinnamon
golden raisins
finely chopped lemon rind
rum
egg yolks
whole egg
granulated sugar
dry white wine
coffee liqueur (Tia Maria)

Method:

  1. Core, peel and slice apples. Place in a saucepan with 1/2 cup (125 ml) sugar, cinnamon, raisins, lemon rind and rum. Cover and cook 10 minutes over medium heat. Stir 2 to 3 times during cooking.

  2. Remove saucepan from stove and let cool. Divide apples between 4 glass coupes and set aside.

  3. Place all eggs in stainless steel bowl. Add remaining sugar, wine and liqueur. Place bowl over saucepan half-filled with hot water set over low heat. Beat with electric beater at low speed until mixture triples in volume.

  4. Pour sabayon over apples and serve.
