Yum Cha and Other Appetizers

This section includes recipes which will tantalize the taste buds without spoiling your appetite for the main meal to come. Some portions and light quick cooking are the secret.

Yam cha recipes can form a meal in themselves. They are a series of little snacks, either steamed or fried, and are normally eaten at midday as a kind of brunch. This is a meal to be eaten with a few friends, as the point is to have as big a selection as possible. The range of choice is enormous.

Dim sum are steamed or fried packages made with wrappers or skins composed of various kinds of flours, eggs, bean curd, yams, bread dough or pastry, and wrapped around ground meat or other fillings.

To serve at home, provide a selection of dipping sauces such as chili, soy, rice vinegar, sesame oil and garlic paste which should be put in the center of the table.

Tea is the proper drink to have with this snack meal - the teapot should be refilled as soon as it is empty.
