Cloud Swallows Recipe

Filling:
1/4 lb/ 110 g
1/4 lb/ 110 g

1/4 tsp/ 1 ml

Sweet & Sour Sauce:
3/4 cup/ 185 ml
1/2 cup/ 125 ml
1/2 cup/ 125 ml
1 tbsp/ 15 ml
1 tbsp/ 15 ml

 

wonton wrappers
beaten egg white
oil, for deep-frying


chicken, finely chopped
fish fillets, finely chopped
stalk celery, finely chopped
small green onion, finely chopped
light soy sauce
salt


water
sugar
white vinegar
tomato catsup
cornstarch

 

Method:

  1. Combine all filling ingredients.

  2. Place 1 tsp/ 5 ml of mixture on each wonton wrapper. Brush edges lightly with egg white. Fold to form a triangle. Place a dab of egg white on the left front corner of triangle. Join the front of the left to the back of the right side of triangle to form a swallow.

  3. Deep-fry in oil until golden. Serve with sweet and sour sauce.

  4. To make sauce: Combine all ingredients in a saucepan. Beat and stir until boiling. Serve in bowls.
