Mock Duck Foo Yung Recipe

Ingredients:
3 tbsp/ 45 ml

10 oz/ 280 g
1/3 cup/ 85 ml
1/3 cup/ 85 ml

vegetable oil
medium onion, shredded
can vegetarian mock duck, thinly sliced
green peas, blanched
corn kernels, canned or cooked
eggs, beaten
salt and pepper
light soy sauce
vermicelli noodles, fried and lightly crushed
green onion, shredded

Method:

Heat oil in a pan.
Add onion and stir-fry with mock duck, peas and
corn 2 minutes. Stir in eggs, salt, pepper and
soy sauce. Draw edges of mixture into the center
until set, without allowing mixture to dry.

Place noodles on a
serving platter. Place egg mixture on top,
leaving a noodles border. Top with green onion
shreds.
