Crunchy Omelet in A Nest Recipe

Ingredients:

vegetable oil
medium onion, finely shredded
celery, finely chopped
red pepper, finely chopped
fresh mushrooms, thickly sliced
bean sprouts, root removed
salt and pepper
eggs, beaten
green onion, finely chopped
chopped cashew nuts
large potato nest

Method:

Heat oil in a wok.
Add onion, celery and red pepper, and stir-fry 2
minutes. Add mushrooms, bean sprouts and
seasonings and stir-dry 1 minute. Pour in eggs.
Fold into vegetables until mixture sets. Turn
over and cook for 1 minutes.

Remove and cut
into strips. Place into potato nest. Sprinkle
with green onions and cashews, and serve at
once.
