Bean Curd Omelet Recipe

Ingredients:
3 tbsp/ 45 ml
1/4 tsp/ 1 ml

1/3 cup/ 85 ml
1/4 lb/ 110 g

1 tbsp/ 15 ml

vegetable oil
salt
green onions, finely chopped
peas, blanched in boiling water 1 minutes
bean curd, cut in 1/2 inch/ 1 cm dice
eggs, beaten
light soy sauce

Method:

Heat oil in a wok.
Add salt, green onions, peas and bean curd.
Stir-fry 1 minute.

Pour in eggs. Cook over medium
heat until mixture begins to set. Draw outer
edges to the center until eggs are the
consistency of scrambled eggs, moist and
retaining shape.

Sprinkle with soy sauce before
serving.
