Asparagus in the snow Recipe

Ingredients:
1 lb/ 450 g
1 slice
1 tbsp/ 15 ml
3 tbsp/ 45 ml

1 tbsp/ 15 ml
1 cup/ 250 ml

fresh green asparagus, tough ends removed
fresh ginger
dry sherry
vegetable stock
egg whites
cornstarch
seasoned vegetable stock

Method:

Place asparagus,
ginger, sherry and stock into pan. Cook over
high heat 3-4 minutes until crispy tender. Place
asparagus on a serving platter, reserving
cooking liquid.

To make sauce,
beat egg whites with asparagus cooking liquid.
Blend cornstarch with seasoned stock. Heat until
thickened. Whisk 3 tbsp/ 45 ml heated thickened
stock into egg mixture. Whisk egg mixture into
remaining stock. Serve hot.
