Shrimp Chow Mein Recipe

1/2 cup/ 125 ml
1 tbsp/ 15 ml
1 tbsp/ 15 ml
1 lb/ 450 g

Chinese mushrooms
oil
stalks celery, sliced
bamboo shoots, sliced
bean sprouts, washed
water chestnuts, drained and sliced
chicken stock
dry sherry
soy sauce
shrimp, peeled

Method:

Soaked mushrooms
in warm water for 20 minutes. Drain and squeeze
dry, discard stalks and sliced caps into strips.

Heat oil in a wok.
Add celery, bamboo shoots, mushrooms, bean
sprouts and water chestnuts. Stir-fry about 2
minutes until vegetables are tender but crisp.

Pour in stock and
sherry. increase heat to high and bring to a
boil. Reduce heat and stir in soy sauce and
shrimp. Cover and cook for 3 minutes. Remove
from heat and serve immediately.
