Crabmeat Sauce over Broccoli Recipe

Ingredients:
1 tbsp/ 15 ml
1 slice
1 clove
1 2/3 lbs/ 750 g
1/4 tsp/ 1 ml
1 tsp/ 5 ml
1/2 tsp/ 2.5 ml
3 tbsp/ 45 ml
1/4 cup/ 60 ml
Sauce:
1 tbsp/ 15 ml
1/4 tsp/ 1 ml
1 cup/ 250 ml
1 1/2 tbsp/ 20 ml
3 tbsp/ 45 ml
1/2 lb/ 225 g
1 tbsp/ 15 ml

vegetable oil
fresh ginger
garlic, crushed
broccoli florets
salt
light soy sauce
sugar
dry sherry
fish stock or water
dry sherry or white wine
salt
pinch pepper
fish stock
cornstarch
stock or water
crabmeat, fresh, frozen or canned
shredded red pepper, blanched

Method:

Heat oil in a wok.
Add ginger and garlic and cook until golden;
remove. Add broccoli, stirring to coat with oil.
Stir in salt, soy sauce, sugar, sherry and
stock. Cook covered for 3-4 minutes until
broccoli is bright green. Avoid overcooking.

Remove to serving
platter and keep warm.

To make Sauce:
Heat sherry, salt, pepper and stock. Stir in
cornstarch blended with stock or water to
thicken. When boiling, stir in crabmeat. Simmer
2-3 minutes.

Pour sauce over
broccoli, garnish with red pepper and serve.
