The Chinese have two main categories of sauces. Some sauces are incorporated into the dish and mixed with the other ingredients by the cook. The other group of sauces are served at the table as dipping sauces.

Marinades are also widely used in Chinese Cooking to flavor and tenderize the food before it is actually cooked.
