Plum Sauce Recipe

Ingredients:

1/4 cup/ 60 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
3 tbsp/ 45 ml
1/2 cup/ 125 ml
1/2 cup/ 125 ml

fresh plums, pitted and finely chopped
dried apricots, soaked in warm water 1 hour and finely
chopped
chili pepper sauce
salt
water
sugar
vinegar

Method:

Place plums and
apricots in a wok. Add chili pepper sauce, salt
and water. Bring to a boil and simmer gently
gently 15 minutes. Add a little more water if
the mixture becomes too dry.

Stir in sugar and vinegar and
simmer 20-30 minutes until the sauce reaches a
chutney-like consistency. Pour sauce into a
sterilized jar, cover and refrigerate when cool.
This sauce will keep several months.
