Fried Noodles with Chicken and Vegetables Recipe

Ingredients:

1/2 lb/ 225 g

1
1/2 lb/ 225 g
1 clove

1/2 cup/ 125 ml
1/2 tsp/ 2.5 ml
1 tbsp/ 15 ml
 



fresh egg noodles
oil, for deep-frying
whole chicken breast, skinned and boned
uncooked shrimp, peeled
garlic, crushed
bamboo shoot, shredded
Chinese mushroom
vegetable (e.g. celery, green onions, beans), cut into matchsticks
stock
cornstarch
soy sauce
pinch five-spice powder

 

Method:

  1. Divide noodles into four portions. Deep-fry each portion in hot oil until golden brown. Drain on paper towels.

  2. Soaked Chinese mushrooms in warm water 20 minutes. Remove stem and sliced cap.

  3. Cut chicken meat into strips. Heat wok, add 1 tbsp/ 15 ml vegetable oil and stir-fry chicken and shrimp with garlic. Add bamboo shoot, mushrooms and vegetables and stir-fry for a further 5 minutes.

  4. Pour in stock, cornstarch dissolved in soy sauce and five-spice powder and simmer for 5 minutes.

  5. To Serve: Place noodles on a plate and spoon chicken and vegetables on top.
