Roast Duck Plum Sauce Recipe

Ingredients:
5 1/2 lb/ 2.5 kg
1 tbsp/ 15 ml
1/4 cup/ 60 ml
Sauce:
1/4 cup/ 60 ml
1 tbsp/ 15 ml
3 tbsp/ 45 ml
2 tbsp/ 30 ml
1 tsp/ 5 ml

vegetable oil
plum sauce
chicken stock
brown sugar
soy sauce
honey
five-spice powder

Method:

Combine marinade
ingredients in a large bowl. Add duck and baste
with mixture. Marinade 1 hour. Baste and turn
duck every 15 minutes.

Drain duck,
reserving marinade. Roast duck Chinese style on
a rack over a pan of water at 350 oF/
180 oC for 2 hours, basting with
marinade every 30 minutes.

Chop duck into
serving pieces and arrange on a serving platter.
Heat oil in a saucepan, add plum sauce and heat
through. Pour over duck.
