Fillet Steak Chinese-Style Recipe

Ingredients:
3/4 lb/ 340 g piece
1 tbsp/ 15 ml
1 tbsp/ 15 ml
1 tbsp/ 15 ml
3 tbsp/ 45 ml
1/4 tsp/ 1 ml

1/2 tsp/ 2.5 ml
1 tsp/ 5 ml
1
1/4 cup/ 60 ml
1/2 tsp/ 2.5 ml

beef fillet
soy sauce
hoisin sauce
dry sherry
pinch five-spice powder
vegetable oil
salt
large onion, peeled and cut into eights
chopped fresh ginger
chopped garlic
cornstarch
beef stock
sesame oil
green onion tops, to serve

Method:

Freeze beef
briefly until firm, then cut into thin slices.

Combine beef with
soy and hoisin sauces, sherry and five-spice,
and marinate for 15 minutes. Remove beef and set
marinade aside.

Heat 1 tbsp/ 15 ml
oil in pan. Add salt and onion and stir-fry for
1 minute. Remove onion with a slotted spoon and
set aside. Heat remaining oil in pan and add
ginger, garlic and beef. stir-fry 1-2 minutes,
until beef just loses it pinkness.

Return onion to
pan. Blend cornstarch and stock and stir in to
thicken. Sprinkle sesame oil on top and serve
garnished with sliced tops of green onions.
