Char Sui Recipe

Ingredients:

1 2/3 lbs/ 750 g
1 1/2 tbsp/ 20 ml
1 1/2 tbsp/ 20 ml

Marinade:
3 tbsp/ 45 ml
2 tbsp/ 30 ml
1/4 cup/ 60 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
1 slice
1 clove
3 tbsp/ 45 ml
 



boneless pork
honey
hot water


soy sauce
dry sherry
hoisin sauce
five-spice powder
sesame paste
brown sugar
slice fresh ginger
garlic, crushed
vegetable oil
dash red food coloring

 

Method:

  1. Combine and mix well all marinade ingredients in a bowl.

  2. Cut pork into strips 1 1/4 x 6 inches/ 3 x 15 cm. Pierce all over with a skewer. Add to marinade, stirring to coat. Let stand 1 hour or overnight in refrigerator.

  3. Roast pork Chinese style on a rack over a pan of water, at 400 oF/ 200 oC for 15 minutes. Baste with marinade. Reduce heat to 350 oF/ 180 oC. Roast a further 10 minutes.

  4. Combined honey with hot water. Brush pork with honey mixture on each side, and continue cooking for 10 minutes.

  5. Slice pork thinly. Serve hot or cold or in combination recipes.
