Cantonese Beef Recipe

Ingredients:

1 lb/ 450 g

1 cup/ 250 ml
1 1/2 tbsp/ 20 ml
2 1/2 tbsp/ 40 ml

vegetable oil
medium onions, peeled and finely shredded
large tomatoes, peeled, cut in eights
sugar
salt
fermented black beans, chopped
chopped fresh ginger
chopped garlic
boneless steak, cut in thin strips
soy sauce
beef stock
cornstarch
stock or water
green tops of green onions, sliced

Method:

Heat 3 tbsp/ 45 ml
oil in a pan. Add onions, stir-fry 2 minutes.
Add tomatoes, sugar and salt; stir-fry 1 minute.
Cover and cook until tomatoes are just tender
and retain shape. Remove to a bowl.

Heat remaining oil, add black
beans, ginger and garlic. Stir-fry 1 minute. Add
beef and cook over high heat until color
changes, 2-3 minutes. Add soy sauce, tomato
mixture and beef stock.

Stir in cornstarch blended with
stock or water to thicken.

Serve garnished with green onion
tops.
