Hot Sour Bean Curd Soup Recipe

Ingredients:
6 cups/ 1.5 L
1 tbsp/ 15 ml
1 tsp/ 5 ml
1 tbsp/ 15 ml
1 tbsp/ 15 ml
1 tbsp/ 15 ml
1/2 lb/ 225 g

vegetable stock
cornstarch
grated fresh ginger
dry sherry
salt-reduced soy sauce
white vinegar
pinch cayenne pepper
firm bean curd, cut into 1/2 inch/ 1 cm cubes
egg white, lightly beaten
lettuce leaves, shredded

Method:

Blend stock with
cornstarch and bring to a boil. Add ginger,
sherry, soy sauce, vinegar and pepper. Simmer 2
minutes.

Add bean curd to
heat through for 2 minutes. Pour in egg white.
When set, add lettuce, serve at once.
