Cold Summer Noodles Recipe

Ingredients:
1 lb/ 450 g
6 cups/ 1.5 L
1/2 lb/ 225 g
1/2 lb/ 225 g

1 tsp/ 5 ml
1/4 cup/ 60 ml
1/4 cup/ 60 ml

eggless curry-flavored noodles
vegetable stock
chicken breast, steamed & shredded
fresh bean sprouts, roots removed and blanched
English (seedless) cucumber, cut in half lengthwise and
shredded
chopped garlic
vinegar
salt-reduced soy sauce

Method:

Cook noodles in
boiling stock 4 minutes. Drain and cool,
discarding stock.

Combine chicken,
bean sprouts and cucumber. Add garlic, vinegar
and soy sauce. Add to noodles, toss to blend.
Serve chilled.
