 LOW FAT LOW CHOLESTEROL RECIPES

Chicken with Vegetable Satay Recipe

Ingredients:

1/2 lb/ 225 g

chicken breast, skin removed, cut in 3/4 inch/ 2 cm cubes
salt-reduced soy sauce
medium onion, quartered
red pepper, cut into 3/4 inch/ 2 cm cubes
button mushrooms
long bamboo satay sticks, soaked in water to prevent burning
orange juice

 

Method:

  1. Combine chicken with soy sauce and let marinate 15 minutes. Thread chicken, onion, red pepper and mushrooms onto satay sticks. Place on a sheet of foil and brush with orange juice.

  2. Broil under medium heat until chicken is white. Baste with orange juice frequently to prevent drying out. Serve with brown rice.
