Fresh Fruit Rolls Recipe

firm ripe mango, peeled & cut in 3/4 inch/ 2 cm cubes
ripe fresh pineapple, peeled & cut in 3/4 inch/ 2 cm cubes
large apple, peeled & cut in 3/4 inch/ 2 cm cubes
kiwi fruit, peeled & cut in 3/4 inch/ 2 cm cubes
firm bananas, peeled & cut in 3/4 inch/ 2 cm cubes
strawberries
orange liqueur
large spring roll wrappers
egg white, beaten
vegetable oil, for frying
icing sugar
vanilla ice cream

 

Method:

  1. Combine fruit in a bowl. Sprinkle with liqueur and stand 15 minutes; drain. Divide fruit between spring roll wrappers. Brush edges with egg white. Roll up as for ordinary spring rolls.

  2. Fry three rolls at a time in oil to cover. When golden, remove and drain well.

  3. Dust with icing sugar and serve with ice cream.
