Almond Float Recipe

Ingredients:
2 1/2 cups/ 625 ml
1/4 cup/ 60 ml
2 tbsp/ 30 ml
1/2 cup/ 125 ml

milk
sugar
almond extract
gelatine
water
selection of prepared fresh fruit & canned lychees

Method:

Scald milk, remove
from from heat and add sugar. Cool slightly then
add almond extract; cool. Sprinkle gelatine over
water and leave until water is absorbed.
Dissolve gelatine over hot water and cool. stir
into milk mixture.

When ready to
serve, cut almond gelatine into diamond shapes.
Place fruit in a serving bowl and arrange
diamond shapes on top.
