Almond and Cashew Nut Cookies Recipe

Ingredients:
1 cup/ 250 ml
1 cup/ 250 ml

3 tbsp/ 45 ml
3 tbsp/ 45 ml
1/2 tsp/ 2.5 ml
1/2 tsp/ 2.5 ml
2 1/2 cups/ 625 ml
1 1/2 level tsp/ 7.5 ml

shortening
white sugar
egg, beaten
ground almonds
ground cashew nuts
vanilla extract
almond extract
all-purpose flour
baking powder
pinch salt

Method:

Put cream
shortening and sugar together in a bowl. Add
egg, almond, cashews, vanilla and almond
extract.

Sift flour, baking
powder and salt together. Fold into creamed
mixture and knead lightly. Shape dough into
walnut sized balls. Arrange on lightly greased
baking sheets. Press each ball with a fork to
flatten slightly.

Bake at 400 oF(200
oC) until pale golden, 15-20 minutes.
