China has the oldest cuisine in the world. An everyday meal includes
rice, wheat buns, or noodles with braised, roasted, or stir-fried
dishes and a soup. Traditionally, the food is eaten from bowls with
blunt ended chopsticks and accompanied by small cups of green or
jasmine tea, or, on special occasions, rice wine.
There are four regional style. In the north, bread, pancakes, and
noodles are eaten as much as rice. Lamb is more common than pork,
and roasting is popular, but very little spice or chili is used. On
the east coast there are rich braised dishes and stewing is popular.
Thick, meaty dishes are served with noodles, and there are
freshwater and sea fish. In the central and western areas the dishes
are vibrant, colorful, and packed with flavor. Chili is much used,
as are garlic, ginger, and fermented black beans. In the south,
where the dishes are more subtle, pork, chicken, shrimp, and fish
are steamed and stir-fried.
