Braised Beef Recipe
(serves 4 to 6)

 

Ingredients:

2 tbsp/ 30 ml
4 lbs/ 1.8 kg

1 cup/ 250 ml
28 oz/ 796 ml
1/2 cup/ 125 ml
3 cups/ 750 ml
1 tsp/ 5 ml
1/2 tsp/ 2 ml
1 tsp/ 5 ml
 

 

olive oil
bottom round roast, tied
large onions, cut in 6
garlic cloves, smashed and chopped
cranberry sauce
can tomatoes, drained and chopped
sherry
beef stock, heated
basil
thyme
oregano
salt and pepper

Method:

  1. Preheat oven to 350 oF (180 oC).

  2. Heat oil in ovenproof casserole over high heat. Add meat and sear on all sides. Season with salt and pepper.

  3. Add onions and garlic; continue cooking 8 minutes to sear onions. Stir once or twice during cooking.

  4. Add remaining ingredients. Season and bring to boil. Cover and cook 2 1/2 to 3 hours in oven.

  5. Serve with fresh vegetables.

Note: To thicken sauce at end of cooking, pour 2 cups (500 ml) of sauce into saucepan. Dissolve 1 tbsp (15 ml) cornstarch in 3 tbsp (45 ml) cold water. Stir into sauce and cook 1 minute over high heat.
