Baked Leek Casserole Recipe
(serves 4 to 6 )

 

Ingredients:

1 tbsp/ 15 ml

2/3 cup/ 150 ml
1/4 tsp/ 1 ml
1 1/2 cups/ 375 ml

 

butter
cooked leeks, white part only, drained & chopped
beaten eggs
flour
nutmeg
milk
pinch paprika
salt and pepper

Method:

  1. Preheat oven to 375 oF (190 oC).

  2. Butter baking dish.

  3. Place cooked, chopped leeks in bowl with beaten eggs; mix together. Incorporate flour. Add paprika, nutmeg and milk; season well. Mix together with whisk.

  4. Pour mixture into baking dish and bake 40 minutes in oven. Slice and serve.
