 CAJUN & CREOLE

Pork Braised with Zucchini Recipe
(serves 4 to 6)

Ingredients:

1/2 tsp/ 2 ml
1/2 tsp/ 2 ml
1 tsp/ 5 ml
1/2 tsp/ 2 ml
1/2 tsp/ 2 ml
1/2 tsp 2 ml
4 tbsp/ 60 ml
2 lbs/ 900 g
3 tbsp/ 45 ml

3 cups/ 750 ml

1 cup/ 250 ml

 

white pepper
black pepper
oregano
thyme
cayenne pepper
garlic powder
flour
lean boneless pork, cubed
butter
onions, diced
celery stalk, diced
chicken stock, heated
zucchini, diced
cooked kidney beans
salt
 

Method:

  1. Preheat oven to 325 oF (160 oC).

  2. Mix spices and herbs together; stir into flour. Dredge cubes of pork in flour mixture.

  3. Heat butter in ovenproof casserole over medium heat. Add pork and sear on all sides for 10 minutes or just until flour sticks to bottom of casserole. Season with salt.

  4. Add onions and celery; mix well. Cook 8 minutes over medium heat.

  5. Incorporate chicken stock. Season with salt and bring to boil. Cover and cook 2 hours in oven.

  6. Fifteen minutes before end of cooking, add zucchini and beans. Mix, cover and resume cooking.

  7. Serve with mashed potatoes.
