Navy Beans Cajun-style Recipe
(serves 4 to 6 )

Ingredients:

1 1/4 cups/ 300 ml
2 tsp/ 10 ml
1/4 tsp/ 1 ml
1/2 tsp/ 2 ml
1/2 tsp/ 2 ml
1 tsp/ 5 ml

 

olive oil
dry shallots, peeled and diced
celery stalk, diced
carrots, pared and diced
garlic cloves, smashed and chopped
dried navy beans, soaked 8 hours in cold water
Cajun bean seasoning
cayenne pepper
sage
thyme
oregano
salt and pepper

Method:

  1. Heat oil in saucepan over medium heat. Add vegetables and garlic; stir, cover and cook 6 minutes.

  2. Add drained beans and mix. Incorporate remaining ingredients. Gradually pour in enough cold water to cover beans by 2 1/2 in (6.5 cm). Season generously with salt and pepper.

  3. Cook, partly covered, 2 1/2 hours over medium heat. Stir several times. adding more water as needed.

  4. Serve with fresh bread.
