Louisville Lentils Recipe
(serves 4 )

Ingredients:

1 1/2 cups/ 375 ml
1 tsp/ 5 ml
1/4 tsp/ 1 ml
1

 

olive oil
carrots, pared and diced
celery stalk, diced
dry shallots, peeled and halved
onion, chopped
dried lentils, washed & drained
Cajun seasoning for beans & rice
cayenne pepper
chorizo sausage, sliced
salt and pepper
 

Method:

  1. Heat oil in saute pan over medium heat. add vegetables and cook 6 minutes over low heat.

  2. Add lentils and spices. Mix and cover with water. Bring to boil and partly cover. Cook 1 hour 15 minutes over low heat.

  3. Add sausage. Season with salt and pepper. Partly cover and continue cooking 15 minutes. Serve.
