Chicken Wings Baton Rouge Recipe
(serves 4 to 6 )

Ingredients:

Marinade:

1 cup/ 250 ml
1 cup/ 250 ml
1 tbsp/ 15 ml

1 tsp/ 5 ml

Seasoning:
4 tbsp/ 60 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
1 tsp/ 5 ml

 


chicken wings
beer
chicken stock
olive oil
garlic cloves, blanched, peeled & pureed
Worcestershire sauce
hot pepper sauce


butter
cayenne pepper
black pepper
oregano
basil
thyme
rosemary
salt

Method:

  1. Remove tips from chicken wings. Place wings in bowl and mix in marinade ingredients. Marinate 2 hours in refrigerator.

  2. Preheat oven to 450 oF (230 oC).

  3. Remove wings from marinade.

  4. Melt butter in cast iron pan over medium heat. Add seasonings and chicken wings. Mix well and cook 7 minutes over medium heat. Stir frequently.

  5. Transfer pan to oven and finish cooking 10 minutes. Serve.
