Beans from the Latin Quarter Recipe
(serves 4 to 6 )

Ingredients:

1 1/2 cups/ 375 ml
2 tbsp/ 30 ml

1/4 tsp/ 1 ml
1 tsp/ 5 ml
1 tsp/ 5 ml
1/2 tsp/ 2 ml
salt
 

 

dried navy beans
butter
onions, diced
celery stalk, diced
garlic cloves
smashed and chopped
black pepper
cayenne pepper
taco seasoning
basil
thyme
salt

Method:

  1. Soak beans in cold water for 8 hours. Drain and set aside.

  2. Heat butter in large saucepan over medium heat. Add onions and celery. Mix and cook 6 minutes. Add garlic and cook 2 minutes.

  3. Add seasonings and beans. Mix well and correct seasoning with salt. Add enough water to cover beans by 2 in (5 cm). Bring to boil. Partly cover and cook beans 2 1/2 hours over medium heat. Stir occasionally and add more water if needed.

  4. Serve with fresh bread or garlic bread.
