Anzac Biscuits Recipe
(makes: about 48)

Ingredients:

125 g
1 tbsp
125 g/ 1 cup
100 g/ 1 cup
90 g/ 1 cup
185 g/ 3/4 cup
1 tsp
2 tbsp

 

unsalted butter, plus extra for greasing the baking trays
golden syrup
plain flour
rolled oats
desiccated coconut
caster sugar
bicarbonate of soda
boiling water

 

Method:

  1. Preheat the oven to 180 oC, and use the extra butter to grease four baking trays.

  2. Melt the rest of the butter and the golden syrup gently in a pan. Remove it from the heat.

  3. Sift the flour into a large mixing bowl, and then stir in the oats, coconut and sugar.

  4. Blend the bicarbonate of soda with the boiling water and add it to the butter mixture.

  5. Pour the melted butter mixture into the flour mixture and stir well until evenly combined.

  6. Using a metal teaspoon, place heaped spoonfuls of mixture on the baking trays, 5 cm apart.

  7. Bake for 15-20 minutes or until golden brown. Cool for 2 minutes on the tray, then use a palette knife to transfer the biscuits to a wire rack until cold. Store in a airtight tin.

PREPARATION TIME:   20 minutes                    COOKING TIME:    15-20 minutes per batch
