American Muffins Recipe
(makes: 10-12 muffins) |
Ingredients:
250 g/ 2 cups
3 tsp
1/2 tsp
90 g/ 1/2 cup

250 ml
60 g

plain flour
baking powder
bicarbonate of soda
light brown sugar
large egg
milk
unsalted butter, melted and cooled

Method:
-
Preheat the oven
to 200 oC. Place 10-12 large, deep,
paper cases in muffin tins.

Sift the dry
ingredients into a bowl and make a well in the
centre.

Beat together the
egg and milk and add to the dry ingredients with
the melted butter. Lightly stir the mixture
together with a fork.

Fill the paper
cases three-quarters full, then bake for 20
minutes until the muffins are well risen, golden
brown and cooked through. Leave them in their
tins for a few minutes then transfer to a wire
rack to cool.
Variations:
-
For blackberry,
blueberry, cranberry or raspberry muffins, add
75 g fresh or partly thawed frozen berries and a
few drops of vanilla essence to the mixture
after adding the melted butter.

For double
chocolate chip muffins, add 4 tbsp of cocoa
powder and 100 g chopped dark, milk or white
chocolate.

For banana, bran
and cinnamon muffins, add two mashed bananas, 50
g natural bran and 1/2 tsp of ground cinnamon.
