Half Chicken On the Grill Recipe
(serves 4)

 

Ingredients:

chicken, 2 1/2 lbs (1.2 kg) each, cut into half
portions Thick Barbecue Sauce
lemon, halved
oil
salt and freshly ground pepper
 

 

Method:

  1. Preheat oven to 375 oF (190 oC).

  2. Leave skin on chicken.

  3. Place chicken halves in roasting pan and season well. Rub lemon over chicken skin and brush with oil. Cook 20 minutes in oven.

  4. Preheat barbecue at medium.

  5. Oil grill. Remove chickens from roasting pan and place on grill, skin-side up. Brush with barbecue sauce and cover. Cook 10 to 12 minutes.

  6. Turn chickens over and baste again. Cover and continue cooking 10 to 12 minutes.

  7. Serve with a salad and grilled vegetables.
